The pad nor the light freezes the liquid. The bottles are stored in a freezer that already has them just slightly below the freezing point. This is called nucleation. The process of pulling the bottle out and inverting it triggers the ice crystallization process. The light just allows you to see the ice crystallization, as it forms.

I think turning it slushy the liquid will need to be churn constantly. I put Coke in my walkin freezer all the time but only the water freezes and the syrup separate and stays liquid.
